
Tea Cake
Light, moist, and wonderfully fragrant, this easy Tea Cake recipe is perfect for pairing with your favourite cuppa. Infused with the delicate flavour of loose-leaf tea and topped with juicy peaches, it’s a beautiful bake for afternoon tea or any cosy gathering.
Ingredients:

160g unsalted butter, softened (about ⅔ cup)

300g caster sugar (about 1 ½ cups)

180ml Sunwide coconut milk (about ¾ cup)

2 bags Sunwide Green Tea Leaves

3 eggs
-
190g self-raising flour (about 1 ½ cups)

30g custard powder (about 3 tbsp)
-
100g Sunwide diced peaches (for topping)
Instructions:

Preheat the oven to 160°C (320°F). Grease and line a 20cm (8-inch) square cake tin with baking paper.

In the large bowl of an electric stand mixer (fitted with the whisk attachment), combine the softened butter, caster sugar, Sunwide coconut milk, Sunwide Green Tea Leaves, eggs, self-raising flour, and custard powder. Gradually increase the mixer speed from low to high. Beat on high for 3-4 minutes, scraping down the bowl occasionally, until the batter is light and fluffy.

Pour the batter into the prepared cake tin and smooth the top. Bake for 40-45 minutes or until the cake is lightly golden, and a skewer inserted into the center comes out clean.

Allow the cake to cool in the tin for 10 minutes before transferring it to a wire rack to cool completely.

Once cooled, serve with a drizzle of Sunwide coconut milk and top with Sunwide diced peaches for a delicious finish!
