Grass Jelly Liquid is a cook-it-yourself base for grass jelly, a traditional Taiwanese herbal dessert, used as a topping in bubble tea, dessert, ice cream, soft serve and shaved ice.

Method of Application:

Grass Jelly Cooking Method

Mix 25g tapioca starch with 75ml cold water. Set aside.
Boil 2 litres of water in a pot, then stir in 250g sugar until dissolved.
Stir in 500ml of grass jelly liquid, then reduce the heat to medium.
Slowly stir in the tapioca starch mixture in two or three additions, not all at once.
Stir five times counterclockwise then five clockwise, repeated, before pouring off. This is what keeps the set even.
Pour into a container and refrigerate until set.
