How much fructose do I use per drink?

About 20ml per 700ml cup for a standard sweetness level.

Most shops offer 30%, 50%, 70% and 100% sugar options off that 20ml baseline. Fruit teas usually need more than milk teas.

What is the shelf life, and how should I store it?

Unopened, 24 months from the production date printed on the bag.

Store in a dry, cool place away from direct sunlight. The best-before date is printed on every bag and every carton.

How many drinks can I make from one 5kg bag?

About 250 drinks, based on 20ml per 700ml cup.

A 4-bag box (20kg) makes roughly 1000 drinks. A fructose dispenser makes this dose repeatable across shifts.

What is the difference between fructose and sugar cane sucrose?

Fructose is neutral, sweeter per gram than cane sugar, and dissolves instantly in cold liquid.

It is the standard sweetener for bubble tea because it never grains out in an iced drink. Sugar cane sucrose is the alternative if you want more character.
