Choco Coconut Scrolls

These soft and fluffy Coco Coconut Scrolls are the ultimate treat for coconut lovers! With a deliciously sweet filling and a creamy coconut frosting, they make for an irresistible snack or dessert. Here’s how to make them from scratch:

Ingredients:

Yudane Dough:

  • 90 g bread flour
  • 100ml boiling water

Main Dough:

  • 360 g bread flour
  • 1 ½ tsp instant yeast
  • 18 g brown sugar
  • 1 ¼ tsp salt
  • 230-250 ml milk (start with the lower amount and add more if needed)
  • All of the Yudane dough above
  • 45 g room temperature butter

Filling:

  • 30 g brown sugar
  • 50-60 g coconut shreds
  • 30 g softened butter

Coco Coconut Frosting:

Instructions:

  1. For Yudane Dough:
    • Add 90 g of bread flour to a bowl, pour in the boiling water, and mix well.
    • Cover with cling film and leave it to rest in the fridge for at least 4 hours or overnight.
  2. For Main Dough:
    • In a bowl, combine the 360 g of bread flour, instant yeast, brown sugar, salt, and all of the Yudane dough.
    • Add 230 ml of milk (starting with the lower amount) and knead until fully incorporated, about 5 minutes.
    • Add 45 g of room temperature butter and continue to knead for another 10-13 minutes, until the dough comes together and reaches the windowpane stage.
    • Let the dough rise in a greased bowl for 60 minutes, or until doubled in size.
  3. For Filling:
    • Cut the butter into cubes and set aside.
    • Combine the coconut shreds and brown sugar in a small bowl, then set aside.
  4. Shaping:
    • Once the dough has risen, punch it down.
    • Roll out the dough on a floured surface.
    • Spread melted butter over the dough, then sprinkle the coconut and sugar mixture on top.
    • Divide the dough into 12 equal sections and cut the dough with a string floss or knife.
  5. For Final Proofing:
    • Let the scrolls rise until nearly doubled, about 45-60 minutes.
  6. For Coconut Frosting:
    • While the scrolls are proofing, whip the cream cheese until smooth.
    • Add coconut milk and chocolate powder and whisk until well combined, adjusting the coconut milk for a thick frosting consistency.
  7. For Baking:
    • Preheat your oven to 190°C (top and bottom heat) or 170°C (fan-forced) for 10-15 minutes.
    • Bake the scrolls for 20-25 minutes, until golden brown.
    • Remove from the oven and immediately spread the frosting over the warm rolls.
