Oolong Tea Cake

Delicately flavored and perfect with a cup of tea, this oolong-infused cake brings a fragrant twist to your dessert table!

Ingredients:
Cake:

  • 280 g all-purpose flour
  • 3 g salt (1/2 tsp)
  • 5 g baking soda (1 tsp)
  • 15 g Sunwide Oolong Tea leaves
  • 80 ml milk
  • 225 g unsalted butter, softened at room temperature
  • 300 g granulated sugar
  • 3 large eggs (approximately 150 g total, weighed without shells)

Glaze:

  • 120 g powdered sugar
  • 120 ml milk

Instructions:

  1. Preheat your oven to 175°C (350°F) and prepare a loaf pan by greasing it or lining it with parchment paper.
  2. In a large bowl, beat the butter and granulated sugar together until light and fluffy.
  3. Add the eggs one at a time, beating well after each addition.
  4. Microwave the milk until warm and steep the Oolong tea leaves in it for 5–10 minutes. Strain the tea and allow it to cool slightly.
  5. Gradually mix the steeped tea into the butter mixture.
  6. In a separate bowl, whisk together the flour, salt, and baking soda. Optional: add finely ground Oolong tea leaves for extra flavor.
  7. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Avoid overmixing.
  8. Pour the batter into the prepared loaf pan and bake for 60–65 minutes, or until a toothpick inserted in the center comes out clean.
  9. While the cake cools, whisk together the powdered sugar and milk to make the glaze.
  10. Drizzle the glaze over the cooled cake, slice, and serve.
