
Oolong Tea Cake
Delicately flavored and perfect with a cup of tea, this oolong-infused cake brings a fragrant twist to your dessert table!
Ingredients:
Cake:
- 280 g all-purpose flour
- 3 g salt (1/2 tsp)
- 5 g baking soda (1 tsp)
- 15 g Sunwide Oolong Tea leaves
- 80 ml milk
- 225 g unsalted butter, softened at room temperature
- 300 g granulated sugar
- 3 large eggs (approximately 150 g total, weighed without shells)
Glaze:
- 120 g powdered sugar
- 120 ml milk
Instructions:
- Preheat your oven to 175°C (350°F) and prepare a loaf pan by greasing it or lining it with parchment paper.
- In a large bowl, beat the butter and granulated sugar together until light and fluffy.
- Add the eggs one at a time, beating well after each addition.
- Microwave the milk until warm and steep the Oolong tea leaves in it for 5–10 minutes. Strain the tea and allow it to cool slightly.
- Gradually mix the steeped tea into the butter mixture.
- In a separate bowl, whisk together the flour, salt, and baking soda. Optional: add finely ground Oolong tea leaves for extra flavor.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Avoid overmixing.
- Pour the batter into the prepared loaf pan and bake for 60–65 minutes, or until a toothpick inserted in the center comes out clean.
- While the cake cools, whisk together the powdered sugar and milk to make the glaze.
- Drizzle the glaze over the cooled cake, slice, and serve.
