Espresso Mochi Brownies

With just a handful of ingredients like SUNWIDE thick coconut milk and 2 in 1 coffee powder, these brownies are easy to whip up and pack a serious flavour punch. Drizzle in some maple syrup and sprinkle in a few chocolate chips for an extra touch of sweetness, and you’ll have a deliciously unique dessert that’s sure to impress!
Ingredients:
- 2 cups (240 g) glutinous rice flour
- 2 large (about 100 g) eggs
- 1 cup (240 ml) SUNWIDE thick coconut milk
- 2 tbsp (30 g) melted butter
- 1 cup (120 g) SUNWIDE 2 in 1 coffee powder
- 1 tsp (5 g) baking soda
- To taste: maple syrup & chocolate chips (approximately 1/2 cup or 90 g recommended)
Instructions:
- Mix all ingredients together until well combined.
- Pour the mixture into a lined baking tray.
- Bake at 180°C for approximately 20 minutes, or until a toothpick inserted in the centre comes out clean.
