Sunwide Eggless Coffee Cupcakes Recipe

Ingredients:

Dry Ingredients:  

  • 120 grams  All-purpose flour (Maida)
  • 5 grams Baking powder
  • 90 grams  Powdered sugar
  • 15 grams Cocoa powder

Wet Ingredients:  

  • 2.5ml Vanilla extract
  • 70 grams Softened butter
  • 180ml Milk (adjust as needed for a smooth batter consistency)
  • 5 grams Sunwide Coffee powder  mixed with 5ml water (adjust to taste)

Instructions:

1.   Preheat   your oven to 200°C (392°F) and prepare your cupcake tray by lining it with paper liners.

2.   Sift together   the all-purpose flour, baking powder, cocoa powder, and powdered sugar into a mixing bowl.

3.   Add   the softened butter, vanilla extract, coffee paste ( Sunwide Coffee powder with water), and milk, mixing until you achieve a smooth batter.

4.   Fill   the lined cupcake moulds with the batter and bake at 180°C (356°F) for about 15-20 minutes, or until a toothpick inserted in the centre comes out clean.

5.   Allow   the cupcakes to cool completely before applying any frosting, as the heat will cause the frosting to melt.

6.   Frosting Suggestions:   You can top your cupcakes with mascarpone cheese mixed with a splash of whiskey or use a coffee buttercream. This recipe features a coffee cream cheese frosting.
