Popping pearls

Juice flavour-filled spheres with a thin seaweed-extract skin that bursts in the mouth. 13 flavours: lychee, mango, strawberry, passion fruit, pomegranate, blueberry, green apple, grape, kiwi, peach, sour lemon, creaming soda and watermelon. 3.2kg tub, 4 tubs to a carton.

Coconut jelly

Also known as nata de coco. Seven flavours: original, mango, lychee, pineapple, grape, peach and strawberry. There is also a star-shape mango and a heart-shape strawberry, each half shapes and half strips. 3.85kg tub, 4 tubs to a carton.

Rainbow jelly

A ready-to-eat jelly set with carrageenan, a setting agent made from seaweed. It comes as mixed red-orange, yellow and white pieces. It carries colour more than flavour, so it changes how a cup looks without changing the taste. 4kg tub, 4 tubs to a carton.

Mini mochi

Small, chewy Japanese-style rice cake pieces in strawberry and mango. 300g pack, 25 packs to a carton. Most shops dose by eye, about 5 to 8 pieces a serve.

Ready to serve on a self-serve bar, no cooking

  • No cooking and no soaking. Popping pearls, coconut jelly, rainbow jelly and mini mochi are all ready to eat.
  • Unopened shelf life is 12 months for popping pearls, rainbow jelly and mini mochi, and 18 months for coconut jelly, from the production date. The best-before date is printed on every tub, pack and carton.
  • Storage before opening: a dry, cool place. Do not refrigerate mini mochi before opening, as cold hardens it.

30g is a light garnish and 60g is a full topping. Most shops land between the two.

Do popping pearls need cooking before they go on the topping bar?

No. They are ready straight from the tub, with no cooking and no soaking. Add them last and do not shake them, or the skins burst.

How long do unopened toppings keep?

Popping pearls, rainbow jelly and mini mochi keep for 12 months unopened, and coconut jelly for 18 months, from the production date. The best-before date is printed on every tub, pack and carton.

How many serves do I get from one tub of popping pearls?

About 73 serves at 30g of drained pearls, or 36 at 60g. A carton of four tubs makes roughly 293 serves at 30g.

Should mini mochi go in the fridge?

Not before opening. Store unopened packs in a dry, cool place, because cold hardens mochi.

Yes. They are ready-to-eat cold toppings, so they go on acai bowls, gelato, soft serve and shaved ice the same way they go on frozen yoghurt.

Do these toppings suit a self-serve topping bar?

Yes. Nothing needs cooking or soaking. Open the tub or pack and fill the topping pans. Keep unopened stock in a dry, cool place.

What is rainbow jelly made from?

Rainbow jelly is a carrageenan jelly. Carrageenan is a setting agent made from seaweed. The pieces are red-orange, yellow and white.
